Beef with Black Bean Sauce
 Ingredients

• dry sherry
• corn flour
• oil
soy sauce
• shallots
• red pepper
• sliced bamboo shoots
• curry powder
• canned black beans
• water
• corn flour extra
• pinch sugar

Thick Soy Sauce

• Trim away any fat from steak. Cut steak into 5cm x 5mm
(2in x 1/4in) strips. Combine in bowl with egg white, sherry,
soy sauce and corn flour, mix well. Stand 30 minutes.
• Put beans in bowl, cover with water, stand 15 minutes,
drain and rinse under cold running water. Put on to plate,
add sugar ad one teaspoon water, mash well. Chop shallots
into 2.5cm (1in) pieces, cut pepper in half, remove seeds,
cut each half into thin strips.
• Add two tablespoons oil to pan or wok, add shallots, red
pepper, bamboo shoots and curry powder, sauté two
minutes, remove from wok. Heat remaining oil in wok, add
meat and marinade, cook until browned.
